Artichoke is one of the world’s oldest vegetables, and its cultivation dates back thousands of years to when the Romans and Greeks grew them for greens. The plant is a large, thistle-like perennial that can grow up to six feet in height. Artichoke contains flavonoids, tannins, vitamin A, zinc, nickel, cobalt, manganese, selenium, and enzymes. It also contains high levels of folic acid, which is beneficial to the neurological health of newborn babies, and is therefore an important addition to the diet of pregnant women. The cynarin content in artichoke helps improve bile flow, protects the liver from infection and toxic substances and improves overall liver function. Artichoke is also known to reduce LDL cholesterol and promote healthy blood circulation.
