Arctium lappa
Burdock root has had a long history as a food throughout Europe and Asia and is also known for its diuretic and purifying properties. The root is bitter, sweet, and oily and contains lignans, bitter principles, inulin, mucilage, natural sugars, pectin, minerals including sulphur, and organic acids. It is a great addition to (or substitute for) root vegetables such as carrots, beets and parsnips.
