Our own bodies naturally produce dangerous chemicals called free radicals that cause irreversible damage (oxidation) to cells. Shiitake (Lentinus edodes): Along with having nutritive content, shiitake contains important compounds that have immuno-modulatory, lipid-lowering, and anti-microbial properties such as lentinan, KS-2, and eritadenine. Lentinan has been found to activate macrophages, T lymphocytes, and the immune effector cells that modulate the release of cytokines, which may in turn account for the observed antitumor and antimicrobial properties. Lentinan is also hypothesized to directly stimulate host immunological processes. Lentinan content of Shiitake has been estimated to be 0.02%. Reishi (Ganoderma lucidum): Reishi mushrooms have a long history in folk medicine, but researchers are just beginning to isolate and identify medicinal substances in reishi that have antitumor, immune modulating, anti-aging, cardiovascular, anticoagulant, cholesterol lowering, hypoglycemic, hepatoprotective, antiviral, and antibacterial effects.
